Quick and easy are two important words in my life these days, especially when it comes to preparing meals.
My sweet girl is two weeks into adjusting to this big world. Her momma is also two weeks into adjusting to this new world of motherhood.
Motherhood is beautifully wonderful, but definitely different than the worlds of being single and newly married. I knew the ways of those worlds well. I developed a rhythm for my life during those many years. I went to the grocery store, got my nails done, made Target runs, and prepared and ate my meals whenever I wanted. Basically my rhythm was my own time, doing what I wanted when I wanted.
I can no longer keep that rhythm with a newborn. And that is a HUGE challenge for me. Yes, I am so thankful for this new way of life, but I am slowly learning a new rhythm. One that requires a shift in perspective and scheduling. I now have to schedule grocery store runs within a two hour time frame, all scheduled around her feedings. I have to make a plan for meals or my husband and I will be eating carrots and hummus for dinner every night (I have to admit that did happen last night so I am thankful for a husband who likes carrots and hummus!).
One recipe that works perfectly for this new way of life is a simple kale salad. I can make it for a side dish to BBQ chicken for dinner one night and eat the leftovers for lunch the next day. Every time I make it, it is a hit. I recently made it for my family while they were visiting their new grand baby and niece, and it was the favorite dish.

I can imagine those words are just as important to you as they are for me, no matter in what season of life you find yourself. You could be in a busy work season with little time (or interest) in preparing elaborate meals, yet you still want to eat healthfully to enable you to keep up with the demands of work. Quick and Easy Kale Salad SAVE RECIPE
4 cups of finely shredded dinosaur kale, cut and trimmed
1/2 cup toasted sliced almonds
1/2 cup parmesan cheese
1 tablespoon minced shallots
1/4 cup freshly squeezed lemon juice
1 tablespoon dijon mustard
2 teaspoons honey
1/4 cup extra virgin olive oil
Sea salt and pepper to taste
Squeeze juice of half a lemon on kale and toss to marinate and soften kale. Whisk together shallots, lemon juice, dijon mustard, honey, and olive oil. Add salt and pepper to dressing to taste. In a large bowl, combine kale, almonds, and cheese. Add dressing and toss to combine.
Serve and enjoy!
