No wonder it is one of Oprah’s favorite things. This smoked turkey tastes AMAZING! It has the perfect smokey flavor that can be enjoyed in many different ways for every meal for at least a week.
I was given a turkey by one of my clients for Christmas. I froze it to save for later and just now diving into it. I wished I had unfroze this wonderful thing sooner! My husband loves it because he knows he can have quality meat for dinner (he loves his protein). My daughter is enjoying it as one of her first food (though she can’t fully chew it, she loves sucking on it). I love it because it has made meal planning SO simple (because this momma needs things to be simple in some areas of her life right now).
It is simple because it is already prepared and cooked. All I had to do was carve it. I eat it hot and cold, mixed with vegetables and quinoa, topped on a salad, or simply as a few plain slices as a snack.
Here are a few ideas on how you can eat it:
- For breakfast: top it on toast (whole wheat, spelt, gluten-free, whatever kind you prefer) with avocado and red pepper flakes.
- For lunch: top it on a green salad with sliced strawberries, kiwi, and cashews. Add your favorite oil based dressing (a balsamic vinaigrette would work great!).
- For dinner: add it to a bowl of cooked quinoa (1 cup of quinoa cooked in 2 cups low sodium vegetable broth) along with tomatoes and onions (you can cook them into the quinoa or just add them raw) then top with cubed avocado and chopped cilantro.
- For snack: eat a few slices plain or top on a rice cake or crackers with a little dijon mustard for an added crunch (so good and so easy!).
